My boyfriend is very tall, I am serious he is a giant! (he towers over most at a 6 feet 8 inches). He also weighs twice as much as me so I concluded if he likes something and happily eats it than it must be good!! So for my latest trick I introduced simple vegan stuffed peppers they are perfect for some last minute home cooked goodness.
daiya vegan cheese (I prefer mozzarella style but cheddar is good too)
Vegan ground meat (I use the smart ground original flavor)
Couscous (today I used the near east brand toasted pine nut because I really like pine nuts but you can also use plain and add some of you favorite spices (I usually use oregano and some Basle)
Bell Peppers (one for each person, it is important when picking out peppers to find ones that stand up well so they don’t spill all over the oven)
To make enough stuffing for three peppers I used on box of the Near East Couscous and half of the package of smart ground.
Preheat oven to 375:
First I make the couscous, if you haven’t done this before it is super easy! You simply follow the directions on the box! Boil water adding in whatever spices you want (of the “flavor packet” if you use the easy rout like I did) than add couscous remove from heat and cover….wait 5 minutes and there you go couscous!
While that is cooking away I usually heat up the ground “meat” and season it a little with some garlic pepper and oregano. (If you want to keep things even easier you can get the Mexican flavor that already has a good flavor)
Cut the peppers much like you would a pumpkin cut around the stem and remove all the seeds (it’s not quite as messy as a pumpkin I promise)
Add together the cooked couscous the ground “meat” and some Daiya cheese (it does not matter how much cheese you put it’s all personal preference here)
Spoon the mixture into the peppers arrange them on a tray and cook them in the oven for about 20 minutes or until the peppers are soft.
That’s it!!! this is supper delicious and one of those “I can’t even tell it is vegan meals” Since I had some delicious rosemary bread I made some garlic toast to go with them while the oven was still hot.
