Simple Vegan Stuffed Peppers So Good a Boyfriend Will Eat Them Too

My boyfriend is very tall, I am serious he is a giant! (he towers over most at a 6 feet 8 inches). He also weighs twice as much as me so I concluded if he likes something and happily eats it than it must be good!! So for my latest trick I introduced simple vegan stuffed peppers they are perfect for some last minute home cooked goodness.

Ingredients:

daiya vegan cheese (I prefer mozzarella style but cheddar is good too)

Vegan ground meat (I use the smart ground original flavor)

Couscous (today I used the near east brand toasted pine nut because I really like pine nuts but you can also use plain and add some of you favorite spices (I usually use oregano and some Basle)

Bell Peppers (one for each person, it is important when picking out peppers to find ones that stand up well so they don’t spill all over the oven)

Garlic

Pepper

Oregano

To make enough stuffing for three peppers I used on box of the Near East Couscous and half of the package of smart ground.

Preheat oven to 375:

First I make the couscous, if you haven’t done this before it is super easy! You simply follow the directions on the box! Boil water adding in whatever spices you want (of the “flavor packet” if you use the easy rout like I did) than add couscous remove from heat and cover….wait 5 minutes and there you go couscous!

While that is cooking away I usually heat up the ground “meat” and season it a little with some garlic pepper and oregano. (If you want to keep things even easier you can get the Mexican flavor that already has a good flavor)

Cut the peppers much like you would a pumpkin cut around the stem and remove all the seeds (it’s not quite as messy as a pumpkin I promise)

Add together the cooked couscous the ground “meat” and some Daiya cheese (it does not matter how much cheese you put it’s all personal preference here)

Spoon the mixture into the peppers arrange them on a tray and cook them in the oven for about 20 minutes or until the peppers are soft.

That’s it!!! this is supper delicious and one of those “I can’t even tell it is vegan meals” Since I had some delicious rosemary bread I made some garlic toast to go with them while the oven was still hot.

How to make fruit exciting

My favorite thing to make lately for BBQs and parties instead of a boring fruit tray is fruit skewers. They are really simple to make but when you stick them in half a pineapple they look delicious and fun! First I like to dress up a regular plate by covering it with the leaves from the top of the pineapple.

Next you cut the pineapple in half and cut out all the good bits leaving half the hallowed out husk. Make sure you leave enough of the fruit for it to be sturdy since we will be putting multiple skewers in it.

And then just skewer whatever fruit you want and stick the skewers into the pineapple husk. For this one I used the pineapple, strawberries, than bought some precut melon and added that on. It is really simple but adds a fun twist to fruit.

Cupcake fail or Bowlcake win?

So the other niaght I bought stuff to make cupcakes for the baby shower on Friday and I made them vegan. (baking powder and apple cider vinegar was sub for the egg (1 tsp of each = one egg I have used this successfully in many baking projects) I’ve done this plenty of times for cakes and it turned out fine!!! so I don’t know what happened but they turned out as Bowlcakes!

So I’m like crap what am I going to do now?!?!?!?!??!!?!?! Than the spirit of Martha Stewart overcame me (yes the spirit of living people can do that) and I came up with the best possible solution short of making new cupcakes! Put a scoop of icecream in the middle cover it with frosting (and blue sprinkles) and pretend it was on purpose I suppose this was more inspired by Julia Child since she says such things as

The only real stumbling block is fear of failure. In cooking you’ve got to have a ‘What the hell?’ attitude

And

No matter what happens in the kitchen, never apologize.

As per expected they turned out a smash hit!!! Congratulations to Josie on her pending baby boy and congratulations to me for being a baking mastermind (it is much better that I use my genius for good and for self-complements than to take over the world)

Vegan Girl’s Guide to Procrastination and Apple Pie

We all have those moments when our to-do list is a mile long and all we want to do is cuddle up in a sweatshirt and watch a Disney movie because the stress of life has been too much. We want to eat junk food and chocolate and not do anything at all!!! Well this is a recipe of sorts to both procrastination and apple pie.  

Ingredients:

Apples

Sugar

Pending craft project

Brown Sugar

Cinnamon

Baby shower to be thrown in three days

Apple cider Vinegar

Vegetable Shortening

Drama

Flour

Salt

Cold Water

And one stressed out Vegan

Preheat oven to 375 (because you just baked up some crescent roles to go with your soup for dinner and that was the temperature they needed)

Step one: In a one bedroom condo combine 1 stressed out vegan, drama, 2 pending craft projects, 1 baby shower to be thrown in three days, and a large amount of apples that need to be consumed before they are less than viable stir vigorously.

Step Two: In a large bowl combine ¾ cup of vegetable shortening, 2 cups of flour, 1 tsp of salt and ¼ cup cold water. Mix. When it is mixed make the dough into a ball and roll it out with a rolling pin.  

Step Three: decide since you don’t own a pie tin that you will make two mini pies in Round Au Gratins you previously purchased to make vegan chick’n pot pie that you never made. Cover bottom of Gratins with dough saving the remaining dough for later.

Step Four: Cut 5 small apples (or three normal sized apples) into pieces that look like an acceptable size to be in a pie.

Step Five: In a bowl add two teaspoons of apple cider vinegar, copious amounts of sugar and brown sugar, and slightly less copious amounts of cinnamon to apple pieces. Stir while adding more sugar and brown sugar until mixture smells like heaven itself! Then add one more pinch of brown sugar.

Step Six: Pour apple and heaven mixture into both pie crusts.

Step Seven: cover pies with remaining dough and sprinkle dough with brown sugar. Then decide to cut little holes in the top because you always see those in apple pies and you do not know if it is for form or function.

Step Eight: Pray that this whole mixture tastes good! (Most important step)

Step Nine: Place pies in oven and set timer for 10 minutes because you have no idea how long to bake pies for.

Step Ten: work on craft that I cannot read details of because said recipient of craft might read this. Check pies every five minutes.

Step eleven: 35 minutes later remove pies from oven. Call boyfriend over to look at how pretty they are! Tell him how you put the holes in the top because they are always there in pictures of apple pies. Boyfriend will than inform you that the holes are very important. Praise yourself for being so smart!

Step twelve: Finish craft while pie cools

Step thirteen: Enjoy delicious pie!!!! Pretend you knew it would turn out amazing all along!

Step fourteen: When your belly is full of apple pie decide the other craft project can wait till tomorrow.

 

Mary Poppins is my Idol!

While other girls love Disney princess movies and cartoons about animals I have always loved Mary Poppins. When I was younger I would watch it EVERY DAY and that is not an exaggeration my mom still remembers evenings when it was getting close to bed but I couldn’t go to bed because I hadn’t watched Mary Poppins, “you can watch until they clean their room” my mom would say and that would satisfy my young love for the effervescent nanny. As an adult I can’t help but wonder if my love for penguins and birds stem from the images I so loved as a little girl. And I make it my life’s Goal to be like Mary Poppins, but what does that mean you ask? Well I will tell you!

To be like Mary Poppins one must have her take charge matter of fact type attitude. . Mary Poppins is nice and cherry and funny yet firm. She packs like a champion is always prepared she works well with children and knows how to have fun. And she loves to laugh!And she is practically perfect in every way! So far I think I am doing pretty well except for the whole being able to fly thing. But there is a list of exactly what Mary Poppins is, it is the advertisement put out by Jane and Michael so let’s see how I measure up (oh yes the pun most certainly is intended).

If you want this choice position

Have a cheery disposition (I like to think I do)

Rosy cheeks, no warts! (check and check)

Play games, all sort (defiantly!)

 

You must be kind, you must be witty (so kind and witty like you wont believe)

Very sweet and fairly pretty (I like to think so)

Take us on outings, give us treats (I would do that yes)

Sing songs, bring sweets (well I do teach a children’s choir at church and bring them candy so yes)

Never give us castor oil or gruel (I don’t even know what those things are)

Love us as a son and daughter (totally would)

And never smell of barley water (again I don’t know)

 

If you won’t scold and dominate us (never!)

We will never give you cause to hate us

We won’t hide your spectacles

So you can’t see

Put toads in your bed

Or pepper in your tea

What does your tattoo mean?

I’m not covered in tattoos, in fact I have two small rather uneventful ones (one on each wrist) the first one is a dove I got 3-4 years ago the other is the word forgiven with three birds I got this weekend. The addition of the second tattoo brought forth questions that most people just didn’t seem to ask before, specifically “what does that mean?” I handled a whole pile of what does that means this weekend I found it odd however that they were not just in regards to the new tattoo but to the original one as well. So let’s just get it all out there, shall we?
Original tattoo left wrist outline of a dove: I was sitting in the parking lot of barns and noble one evening when I decided, it’s time for a tattoo! I Google mapped a tattoo place on my crack-berry and off I went to Absolute Tattoo. I got the outline of a dove because at heart I am really a hippie who likes the idea of peace and also I like birds they are amazing!
New tattoo right wrist the word Forgiven with three birds flying by: I got this with my friend before she moved away for 8 months (she got her daughter’s name) both were designed with my amazing friend. I also got this tattoo done at Absolute Tattoo by a great guy I went to high school with. This one means I am forgiven for my sins by God. And no I do not want to discuss what sense I have committed but yes the three birds recommend three specific things and again no I don’t want to tell you what those are.

 

So those are that tattoos and what they mean….not as exciting as you thought eh? but i love them and in the end they are for me reminders of my past but in the most positive of ways.

Hair and makeup “tips” from a hippie at heart

Breaking news! I’m still alive! So I am not so good at this consistent blogging thing but I will work on it, I promise. Today I am going to talk about why I am the perfect camper/traveler! It is really simple. Most days I don’t brush my hair and a lot of days I don’t wear makeup!!! I know that’s crazy because a) I’m not a guy and b) I have a LOT of hair. Well here is my trade secret and if you have straight hair well you can just ignore this entirely but if you have wavy-mostly curly hair and you straighten it every day here is an alternative.

10 steps to perfect naturally vivacious hair!

1. Take a shower at night.

2. Run a brush through it to get rid of any giant knots.

3. For curly hair put your hair up in a messy bun while still wet. For wavy hair put your hair into a twisty bun.

4. Spray the whole mess of hair with your favorite flexible hold hairspray.

5. Before you go to sleep free your tied up locks and lay them out on your pillow (careful not to crush of flatten)

6. sleep and have dreams of beautiful effortless hair.

7. wake up later than usual because you don’t have to spend an hour on your hair

8. give your hair a little spritz of hairspray

9. if the top or front is doing anything funky get some clips and clip it back

10. that’s it you’re done!!!

Now the makeup thing…..the less you wear it the less you feel like you need it designate a I’m confident in myself and I don’t need makeup day once a week. It gives your skin a much needed breather. Just remember to moisturize!
